Sushi By Bou

When I began shaping the visual direction for Sushi by Bou, a sushi speakeasy concept under the SimpleVenue umbrella, the brand was rapidly expanding while refining its identity. Built on the ethos of “Sushi for the People,” Sushi by Bou set out to make the omakase experience accessible and approachable without sacrificing quality or atmosphere.

Centered around a 60-minute, 12-course tasting, the concept pioneered the “micro-restaurant” model — intimate, design-forward spaces tucked into unexpected locations. From inside the iconic Versace Mansion in Miami to the world’s first restaurant housed within a hotel room suite in Midtown Manhattan, each opening reinforced the brand’s commitment to delivering high-end culinary experiences in unconventional, highly curated environments.
